This is a thoroughly modern sandwich shop where they make their own mozzarella and aioli. And just about everything else. The chef/owner spent 17 years in high-end kitchens before returning home to Alabama to open his panini shop. Pete works in a crisp black chef’s jacket and the food is not only fresh and handmade, it is FAST.
